Mashed Cauliflower Potatoes

Again, another hand-written recipe I'm transcribing.

1 head cauliflower, cut into florets with core and stems set aside for another purpose
microwave cauliflower in 2 tbsp stock until tender, then drain.

2 tbsp butter
2 oz cream cheese
2 tbsp sour cream
1/2 cup shredded cheddar cheese

Put cauliflower into a food processor an pulse together with above ingredients.

Also consider adding:
2 cloves minced garlic, sauted in butter
 a little green onion softened in the garlic and butter

Salt and pepper to taste

Reheat in microwave before serving if necessary.  This doesn't actually taste like mashed potatoes, but it's a yummy substitute for someone who isn't eating potatoes.

Another option is just to grate the cauliflower in the food processor and microwave for 7 minutes.  Don't add anything to the grate and when it's finished, stir it vigorously with a fork.  The cauliflower begins to transform to a lumpy mash which can then be seasoned with a spoonful of whatever catches your fancy.  Keeping it courser seems to keep it a little drier.   Chiffonade or chop your favourite herb into this.
