3 1/4" thick slices of smoked pork loin, diced (you can sub. bacon if you prefer, just dice and saute)
1 tbsp butter
1 onion, chopped finely
2 cloves garlic, chopped finely
8 - 10 oz fresh or thawed (and drained) spinach, chopped
1 cup red pepper, chopped fine
6 eggs
1/4 cup milk
3/4 cup spicy cheese
2 cups mix of other cheeses (mozz, cheddar, feta - whatever you have)
1 or 2 sliced tomatoes
1/4 cup grated cheese
(Boy there's a lot of cheese in this - no wonder it tastes so good)
Oven at 350, greased quiche pan
Scatter ham in the bottom of the quiche pan. Saute onion and garlic in separate pan on med. high until soft. Add red pepper until cooked, then add spinach and cook quickly until the moisture is gone.
***mum's process is a little different as she used frozen red peppers which just need to be thawed, not sauted and she blends her spinach onion and garlic together in blender with eggs and cream
Beat eggs and cream, add hot ingredients and stir together quickly with spicy and regular cheese, then pour over ham in the quiche pan. Cook for about 30 minutes. Take out and put slices of tomato and grated cheese over the top, then return to oven for another 10 minutes or so until set.
