Still entering old hand-written recipes....
This is one of the fun cakes we made, where you mix everything in one pan. Great for kids if you still let them eat flour and sugar -
1 1/2 cups flour
1 cups white sugar
3 rounded tbsps cocoa
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
Sift all dry ingredients in a 9x9 pan until well blended. Bump pan a little to level things off, then make three indentations in the mixture. Mix together:
1 tsp vanilla
1 tsp vinegar
1/3 cup melted butter
and pour a little of this mixture into each of the three indentations. Over the whole pan, pour:
1 cup lukewarm buttermilk or soured milk. (I've used diluted yogurt, "whey" from strained yogurt or from making ricotta, or milk soured slightly with a bit of vinegar).
Stir and blend ingredients until smooth with no flour showing. Shake gently to even out level and bake in a 350 oven for about 30 minutes. Let it cool in the pan.
