This is Mum's recipe which she wanted written down for the family and posterity...super delicious. Hearty and more-ish, especially with a generous slather of butter.
2 oz plain flour
1 oz pinhead oatmeal (a large cut, steel cut oat, not rolled oats)
1 oz wheat germ
1 oz bran
1 tsp baking soda
1/2 tsp salt
1 tsp sugar
1 egg
1/2 pint (275 mL) buttermilk (or dilute yogurt)
Preheat oven to 375. Grease a 1lb loaf tin.
Mix dry ingredients well, then beat egg and buttermilk together and add to dry. Mix first with fork, then with your hands to form smooth dough. Transfer to tin, level the top, and bake in centre of oven for about an hour (50 - 60 minutes). Cool on wire rack, not in pan.
