Wheaten Bannock

Another one of Mum's recipes.  So very delicious.  

Set oven to 375.

Sift together :
4 oz unbleached all purpose flour
2 tsp baking soda
1 tsp salt
2 tsp sugar

add to the above:
12 oz wholewheat flour
3 oz wheatgerm
3 oz bran

then rub in:
2 oz very cold butter, grated

add:
2 eggs, beaten
10 fl oz buttermilk

Mix until just combined.

Grease two loaf tins and cook for approx 30 minutes (until top is brown and sides have slightly pulled away.  Wrap in a tea towel for a few minutes when you take it out of the oven and pan to keep the top from becoming too crunchy.
