Italian Zucchini

Saute the following together until zucchini is lightly browned:
2 tbsp olive oil
4 med zucchini (about 2 lbs) chopped in med pieces
1 1/2 cups chopped onion

Then, add:
1 1/2 tsp salt
2 small cloves chopped garlic
1/4 tsp pepper
1/8 tsp oregano
3 cups chopped tomatoes

Cover and simmer 15 minutes.  Uncover and simmer another 15 minutes until a fairly thick sauce is formed.
